Paul Dolan Vineyards Estate Cabernet Sauvignon is sourced from two single vineyard sites in the heart of Mendocino County - La Ribera Vineyard and Home Ranch Vineyard. Bounded by the Russian River and Mayacamas mountains, La Ribera Vineyard is a patchwork of soils and a perfect medium for growing bright aromatic fruit. The Home Ranch Vineyard, rests on benchland 0.9 miles from the river, an area reminiscent to the Medoc region, leading to highly concentrated fruit with nicely structured tannins. Brilliant ruby in color, the Paul Dolan Cabernet Sauvignon has enticing aromas of ripe cherry with hints of cedar and a warm earthy undertone. An elegant wine with a round mouthfeel and firm youthful tannins, complimented by brambly blackberry and dark huckleberry flavors. Subtle notes of nutmeg and cinnamon spice from the oak round the rich fruit in a full-pallet that carries from start to finish.

Always Certified Organically Grown - At Paul Dolan vineyards all of our wines are certified organically grown by California Certified Organic Farmers (CCOF), a process that takes a minimum of three years. We believe that soil is a living, life giving system that is sensitive to chemicals and over cultivation. In organic farming, we do not use herbicides such as glyphosate or other synthetic pesticides and chemical fertilizers. All of our wines are vegan; we do not use any animal based fining, a finishing process many wines go through. Like many of the best wines in the world we do add sulfites, never more than 100ppm, less than 1/3 the limit of conventional non-organically grown wines.
