The $50 Cabernet that drinks like $150 (and where to actually find it)
The Short Version
Austin Hope Cabernet Sauvignon is what happens when a fourth-generation winemaker decides to stop playing it safe. It's bold without being brash, approachable without being boring, and priced like someone forgot to add a zero.
Quick Stats:
- Region: Paso Robles, California
- Varietal: Cabernet Sauvignon (with Syrah, Petite Sirah, Merlot)
- Vibe: Full-bodied, fruit-forward, unapologetically Californian
- The Verdict: Buy two. Drink one now, hide one for later.
TL;DR: If you're tired of overpriced, overrated Napa Cabs that taste like sadness and oak, Austin Hope is your new favorite bottle.
Who is Austin Hope?
Austin Hope comes from the Hope family, fourth-generation Central Coast winemakers who've been making wine since before it was cool to put your name on a bottle and charge $300 for it.
His grandfather started growing grapes in the 1970s when Paso Robles was still known for... well, not much. His dad kept the tradition going. And Austin? Austin said "Hold my wine" and decided to make Cabernet that actually tastes like something.
Here's the thing about Austin Hope: He's not trying to be Napa. And thank god for that.
While Napa winemakers are busy debating whether their $400 Cabernet needs another year in French oak, Austin is making wines that regular humans (who also happen to have excellent taste) actually want to drink.
No pretension. No BS. Just big, bold, beautiful California Cabernet that doesn't require a sommelier to explain why you should like it.
What Makes Austin Hope So Good?
1. Paso Robles is the Secret Weapon
Forget Napa. Forget Sonoma. Paso Robles is where the magic happens.
Located halfway between San Francisco and Los Angeles, Paso has something most wine regions don't: a 50-degree temperature swing between day and night. Scorching hot days ripen the grapes to candy-like perfection. Cool nights preserve the acidity and prevent the wine from tasting like grape juice that went to college.
The result? Grapes with intense flavor, balanced acidity, and none of the "meh" you get from boring regions.
2. The Blend is Chef's Kiss
Austin Hope Cabernet isn't a one-trick pony. It's predominantly Cabernet Sauvignon, but Austin blends in Syrah, Petite Sirah, Merlot, and Petit Verdot depending on the vintage.
Why? Because he's not making wine for Wine Spectator. He's making wine for people who want their Cabernet to taste like Cabernet, not like a vanilla extract factory exploded in a barrel.
3. It Doesn't Taste Like Every Other Cab
What it tastes like:
- ✅ Blackberry jam (but make it sophisticated)
- ✅ Dark chocolate (the good stuff, not Halloween candy)
- ✅ Espresso and toasted vanilla
- ✅ Cassis, plum, black cherry
- ✅ A whisper of baking spice and tobacco
It's fruit-forward without being sweet. It's bold without being aggressive. It's everything you want in a California Cabernet without the $200 Napa price tag.
Austin Hope Standard vs. Reserve

- Finish: Long, velvety, makes you want another sip immediately
