Angelisco Blanco is 100% puro de agave tequila made at Casa Tequilera de Arandas, NOM 1499, in Arandas in the Los Altos highlands of Jalisco. Bottled at 40% ABV (80 proof).

The single most important thing about it: it is completely additive free.

Why Additive Free Matters

Mexican regulation permits up to 1% of a tequila's volume in undisclosed additives, glycerin, caramel colour, oak extract and syrup among them, with nothing on the label. That is enough to reshape how a tequila tastes and feels, and most large brands use it. A blanco that goes without has nowhere to hide: what is in the glass is agave, water and the distiller's decisions.

The Production Is Printed on the Bottle

Most tequila labels tell you nothing. This one lists the process, and it holds up against independent records:

• Mature agaves, single estate, grown at high elevation in Los Altos
• Slow cooked, low pressure autoclave, steamed around 24 hours
• Mill crushed, roller mill
• Open fermented, roughly 72 hours in open air
• Twice pot distilled, stainless pot still with copper components

The Aceves family has farmed agave in this part of Jalisco for six generations. Arandas sits in what the trade calls the Golden Triangle of the highland plateau, and highlands agave gives the brighter, fruitier, more mineral profile that valley agave does not.

Tasting Notes

• Nose: Green pear, white pepper and yellow bell pepper.
• Palate: Silky. Caramelised cooked agave with peppercorn, a little cinnamon and vanilla.
• Finish: Clean, with a distinct salt and mineral note and a touch of plum.

How to Enjoy

• Neat, room temperature: an additive free blanco is worth tasting on its own before anything else.
• Margarita or Paloma: the pepper and minerality hold up against lime instead of disappearing.
• Side by side: pour it against a big commercial blanco. The difference additives make is obvious once you look for it.
• Highlands against valley: taste it next to a Tequila Valley blanco to see what elevation does.
