Nose: Crisp notes of juniper alongside delicate floral sweetness, parma violets, a touch of citrus peel and some green vegetal notes in there too, with a pinch of spice. Palate: Wonderfully spicy notes, more prominent than on the nose, cardamom shining through and a scattering of cinnamon, with floral notes continuing. Finish: Soft spicy linger, along with the return of citrus peel.

'Aviation was created by a unique partnership between a bartender and a distiller, in Portland, Oregon. Created in Portland, Oregon by America's first bartender-distiller partnership who had a vision for a versatile and mixable gin. The vision was to create a gin that blended perfect with the popular Jazz era cocktail that was a staple of the roaring 20's, the Aviation Cocktail. After 20 rounds of trials the recipe they landed on was a new style of gin known as American Gin. The resulting Aviation Gin has become an icon of the American distilling movement and sparked the creation of Distillery Row in Portland, Oregon.
