Baker's 7 Year Single Barrel: One Barrel, No Blending, 107 Proof

Baker's carries the signature of Baker Beam, a Beam family distiller, and sits in the Jim Beam Small Batch Collection alongside Booker's, Basil Hayden and Knob Creek. Distilled and bottled by James B. Beam Distilling Co. in Clermont, Kentucky at 107 proof (53.5% ABV), a minimum of 7 years old.

The important word on this label is single barrel. Baker's was a small batch bourbon until 2019, when Beam moved it to single barrel, and that changed what you are buying. There is no blending to average out the highs and lows. What was in that one barrel is what is in this bottle, at full 107 proof, and every bottle carries its own barreling date, age, warehouse and barrel number printed on the neck.

The bottle on our shelf was barreled in March 2015 and drawn at 7 years and 10 months, so nearly a year past the minimum. Older barrel, more oak, more concentration. When this one is gone the next one will be a different barrel with a different story, which is the whole appeal of the format.

Tasting Notes

• Nose: Nuttiness leads, which is unusual and is Baker's signature, over baking spice, caramel and vanilla.
• Palate: Burnt caramel and spiced vanilla with a green peppercorn bite and rye spice cutting the sweetness.
• Finish: The nuttiness returns with oak and vanilla, drying out into warm oak and toasted nut with real heat from the proof.

How to Enjoy

• Neat: 107 proof is the point. Read the barrel before you touch it.
• A few drops of water: opens the caramel and pulls the peppercorn back a step.
• Old Fashioned: at this proof it survives ice and sugar instead of disappearing into them. One of the better sub $70 cocktail bourbons for exactly that reason.
• Gift idea: the printed barrel data on the neck makes this a better gift than a bottle with no story on it.
