The Original California Organic Cabernet
Bonterra has farmed organically in Mendocino since long before it was fashionable, and the Estate Collection is the sharp end of that work: estate grown fruit, careful oak, and a Cabernet that shows what clean farming does for texture.
Bonterra publishes its numbers, which is rare. Organic certification allows a maximum of 100 parts per million of total sulfites, less than a third of the conventional limit, and Bonterra's wines average roughly 70 to 90 ppm. If lower sulfite is the goal, that transparency is worth a lot.
Tasting Notes
- Nose: Cassis, black cherry, sage brush, warm cedar.
- Palate: Dense but lifted, dark fruit framed by fine grained tannin and real acidity.
- Finish: Long, structured, with a savory herbal echo.
