Boschendal Brut Rose

The long labor of love that is the making of this premium Cap Classique begins with a whole-bunch press in separate lots to capture all the grapes\u2019 natural flavors. Only the finest free-run juice was used for fermentation. Upon completion, the tank was filled and left on the primary lees until blending for extra flavor and dimension. The final blend of the base wine was then stabilized and filtered. The sugar level of the wine was adjusted to 24 g/l followed by the addition of the \u2018liqueur de tirage\u2019 (yeast) for the second fermentation in the bottle where the magic of the Cap Classique bubble transpires. This resulted in the mesmerizing fine mousse that Boschendal\u2019s Cap Classique is so well known for. A reserve component (up to 8 years of age) is incorporated for complexity, adding an additional layer of fruit, lushness and vibrancy. A minimum of 12 months, but up to 18 months, maturation on the lees in the bottle followed to build extra complexity and character before release.

This Brut Ros\xe9 captivates with its delicate pale pink color and intoxicating red fruit aromas which further delight the palate with hints of strawberry, raspberry and cherry flavors. It is enjoyed on its own or with an eclectic range of delicious dishes like smoked salmon salads, brie and prosciutto pizza or creamy choux \xe9clairs for a sweet indulgence.
