Calle 23 Blanco: Science Driven Tequila From the Jalisco Highlands
Calle 23 Blanco is an unaged 100% agave tequila made from mature highland agave averaging about seven years old. The pinas are cooked in low pressure autoclaves, fermented for 72 hours and double distilled in pot stills.
In the glass it is crystal clear with herbaceous roasted agave, white pepper and a whisper of mint. The palate is soft and clean with tropical fruit and ripe pear, making it equally good for sipping and for bright, agave forward cocktails.
Calle 23 was created by Sophie Decobecq, a French microbiologist who fell for agave and moved to Mexico to make tequila her own way, with a focus on fermentation. It is produced at NOM 1529 in Jalisco.
The name comes from a street sign she spotted while celebrating the moment her team perfected the recipe. Bartenders love it for its honest agave flavor at a fair price, and it is a great bottle for anyone who appreciates craft.
