Don Fulano Anejo: 30 Months in French Oak, NOM 1146
Don Fulano Anejo is made by the Fonseca family, agave farmers in the Jalisco highlands for five generations, at Tequileña (NOM 1146) in Tequila, Jalisco under master distillers Enrique Fonseca and Sergio Mendoza. Hand selected mature estate agave, natural fermentation with a proprietary yeast, distillation in copper, and spring water off the volcano. Bottled at 80 proof.
This is the one that earns the shelf space. A marriage of old tequilas aged a minimum of 30 months in French Limousin and Nevers oak casks that previously held wine, not the ex bourbon barrels most anejos get. Tighter grain, wine soaked staves, and two and a half years of patience produce structure and dried fruit instead of vanilla and caramel.
Don Fulano is verified additive free by Tequila Matchmaker, the third party program that audits distilleries directly. No glycerin, no oak extract, no sweetener, no color. Everything in the glass got there from agave, copper and wood.

Tasting Notes
- Nose: Slowly cooked agave and dried fruit over cardamom, baking spice and old oak.
- Palate: Deep and layered. Dried fig and apricot, cardamom and clove, cocoa and a natural sweetness that comes off the agave rather than a bottle of syrup.
- Finish: Long, dry and warm, closing on spice, mineral and lingering roasted agave.
How to Enjoy
- Neat, room temperature: this is an after dinner spirit. Treat it like a good cognac.
- In a copita or a Glencairn: the aromatics are the point.
- No ice, no mixer: do not build a cocktail with this. The reposado will carry a margarita just fine.
- Gift idea: for the whiskey drinker who claims not to like tequila. This one usually ends the argument.
