Don Fulano Reposado: NOM 1146, Five Generations of Fonseca Agave

Don Fulano Reposado is made by the Fonseca family, who have farmed agave in the Jalisco highlands for five generations, at Tequileña (NOM 1146) in Tequila, Jalisco under master distillers Enrique Fonseca and Sergio Mendoza. Everything is done the slow way: hand selected mature estate agave, natural fermentation with a proprietary yeast, double distillation in copper pot stills, and spring water off the volcano. Bottled at 80 proof.

The reposado rests 8 to 11 months in French Limousin oak, which is tighter grained than American oak and lends structure rather than vanilla and sugar. Long enough to round the edges, short enough that the bright highland agave stays in front.

Don Fulano is verified additive free by Tequila Matchmaker, the third party program that audits distilleries directly. No glycerin, no oak extract, no sweetener, no color. This is what agave actually tastes like, which is exactly why it lives on the back bar and not in the well.

Tasting Notes

  • Nose: Cooked agave and citrus peel over aniseed, white pepper and gentle oak.
  • Palate: Clean and structured. Roasted agave and herbal sweetness with mature fruit compote, dark chocolate and butter over restrained oak.
  • Finish: Long and dry, closing on agave, mineral and white pepper.
