Production Process:

Grains are hammer-milled to a coarse texture

Milled grain is loaded into the mash tun and heated to produce wort

The mash is transferred, still on grain, into the fermenter for sugar-to-alcohol conversion

Double-distilled in a 550-gallon, 4-plate short column pot still, yielding a fuller-bodied spirit

Aged in charred, tight-grain, proprietary blend barrels of new French and American oak

Barrel aging environment: Central Valley seasonal temperatures ranging from 50°F to 110°F, enhancing oak flavor extraction through natural expansion and contraction
