Mash Bills:

• Bourbon: Mapes Ranch red corn, malted two-row barley, red wheat

• Rye: Merced Rye, Mapes Ranch yellow corn, malted two-row barley

Production Process:

• Grains are hammer-milled to a coarse texture

• Milled grain is loaded into the mash tun and heated to produce wort

• The mash is transferred, still on grain, into the fermenter for sugar-to-alcohol conversion

• Double-distilled in a 550-gallon, 4-plate short column pot still, yielding a fuller-bodied spirit

• Aged in charred, tight-grain, proprietary blend barrels of new French and American oak

• Barrel aging environment: Central Valley seasonal temperatures ranging from 50°F to 110°F, enhancing oak flavor extraction through natural expansion and contraction
