High West finishes its straight whiskey in Oloroso sherry butts, the same dry, nutty casks that give Spanish sherry aged Scotch its character. The whiskey keeps its bourbon and rye backbone and picks up walnut, raisin and dark chocolate on top.
The Cask Collection is High West's playground for finishes, released in small runs. When a finish lands this well it disappears quickly, so treat this as a buy now bottle.

- Nose: Raisin, walnut, orange marmalade and toasted oak.
- Palate: Dried fruit and cocoa over caramel, with rye spice cutting through.
