In 2006, David Perkins, a former biochemist, and his wife Jane founded High West Distillery in Park City, Utah, in a historic livery stable. They started with a 250-gallon still and a saloon, and they built something that nobody expected: a world-class whiskey operation in a state not known for spirits.
