Il Palagio is a 16th century estate in Tuscany's Chianti Colli Fiorentini, purchased in the late 1990s and revived through more than two decades of organic and biodynamic farming, with the vineyards replanted almost entirely from scratch. Each wine in the range takes its name from a song, and When We Dance is one of the estate's most approachable expressions, built mostly from Sangiovese with small amounts of Canaiolo and Colorino.
Fermented and aged in stainless steel with no oak, it stays fresh and fruit forward, the kind of Chianti built for a weeknight bowl of pasta rather than a special occasion cellar pull.
Tasting Notes

- Palate: Crunchy plum and sweet cherry fruit with fine dried herbs.
