Plum is the fruit soju with the deepest Korean precedent. Maesil, the Korean green plum, has been steeped in spirits and made into syrups and liqueurs for generations, so this flavor is not a modern invention the way green grape or strawberry are.
The result is more aromatic and slightly more complex than the other fruit expressions, with a savory tartness underneath the sweetness. At 13 percent it stays easy, but it tastes the most grown up of the line.
