Koval was founded in 2008 in Chicago, becoming the city's first distillery since the mid-1800s. The name means blacksmith in several Eastern European languages, but in Yiddish it refers to a black sheep — someone who forges ahead and does something new. That spirit drives everything they make. Every Koval whiskey is certified organic, distilled from grain to glass in Chicago, and bottled as a single barrel expression fully traceable to its specific barrel and grain shipment.
The Bourbon uses a mash bill of corn and millet, which gives it a character distinct from standard Kentucky bourbons: brighter, fruitier, with a distinctive grain personality that rewards attention.
