Redwood Empire Pipe Dream: Named For a 367 Foot Tree

Pipe Dream is the flagship bourbon from Redwood Empire, blended and bottled in Graton, Sonoma County, California. It is built from barrels aged between four and twelve years and bottled at 90 proof (45% ABV).

The name is not decoration. Pipe Dream is a real coast redwood standing 367 feet in Humboldt Redwoods State Park, roughly 1,340 years old, and the fourteenth tallest tree on Earth. A Four Grain Mash Bill

• 73% corn
• 18% rye
• 5% malted barley
• 4% wheat

Most bourbons use three grains. The 4% wheat here is small but deliberate: it rounds the edge off the 18% rye, which is why this drinks softer than the rye percentage would suggest. Blending barrels from four years out to twelve does the rest, giving young brightness and old wood in the same glass.

Tasting Notes

• Nose: Sweet maple and vanilla with a hint of honey, toasted oak and light spice.
• Palate: Rich and deep. Caramel, roasted pecan and toasted grain over vanilla and warm oak.
• Finish: Lingering char and wood, closing on black pepper.
