This is the cask strength release of Redwood Empire's flagship bourbon, bottled uncut and unfiltered at 116.8 proof (58.4% ABV) in Graton, Sonoma County, California. It is a limited edition, not part of the core range.

Worth knowing before you buy: this is not simply the standard Pipe Dream at a higher proof. The cask strength release uses a different grain recipe.

More rye, less wheat. The wheat in the standard bottling is what rounds the rye off, so pulling it from 4% down to 1.5% and pushing rye up to 20% makes this a noticeably spicier, less rounded whiskey, before you even account for the extra 26 proof points.

Both are blends of barrels aged four to twelve years on the Northern California coast.

The Tree It Is Named For

Pipe Dream is a real coast redwood standing 367 feet in Humboldt Redwoods State Park, roughly 1,340 years old, and the fourteenth tallest tree on Earth. The coordinates on the label, 40.34728 and -123.96152, are its actual position.

Tasting Notes

• Nose: Nutmeg spice up front, with toffee, cherry, toasted walnut and soft leather underneath.
• Palate: Cherry cola and warm caramel over honey, butterscotch and pecan, with black fig and orange marmalade behind.
• Finish: Soft butterscotch with the proof carrying it long.

• Water: a few drops at a time. This one opens up more than most.
