Sho Chiku Bai translates to Pine, Bamboo, and Plum, the Three Friends of Winter in Japanese and Chinese tradition, symbols of endurance, strength, and grace. Takara Sake brought the name to the United States and has brewed this Classic Junmai in Berkeley, California since 1983, using rice grown in the Sacramento Valley and water drawn from the Sierra Nevada mountains.
Junmai means the sake is made purely from rice, water, koji, and yeast, with no added alcohol, the traditional style of Japanese brewing. It is a genuine utility sake in the best sense: reliable, food friendly, and equally comfortable served warm on a cold night or chilled alongside sushi.
Tasting Notes
