St. George Baller: Japanese Precision, American Swagger

Baller American Single Malt is St. George Spirits in Alameda, California doing what almost nobody else attempts: a Californian read on the Japanese read on Scotch. Distilled from 100% American barley, aged three to four years in used bourbon barrels and French oak wine casks, filtered through maple charcoal, and then given a final rest in casks that previously held St. George's own umeshu, the Japanese plum liqueur, made in house from California grown ume. Bottled at 94 proof (47% ABV).

The maple charcoal filtration is the Japanese fingerprint. It is the same logic as the bamboo charcoal filtration used in Japanese whisky and shochu: strip the heavy edges so the delicate fruit has room. Then the umeshu casks put stone fruit back in deliberately. St. George's own label puts it best, that Baller marries the precision of Japanese whiskies with the swagger of American single malts, and the bottle earns that line rather than just printing it.

St. George has been distilling in Alameda since 1982, longer than most of the American craft category has existed, and Baller is the house flagship whiskey.

Tasting Notes

• Nose: Bright stone fruit, plum most of all, with subtle smoke underneath.
• Palate: Plum, mango and lychee up front, then a genuinely unusual turn: salt, a light brine, and brown sugar. Tropical and savory at the same time.
• Finish: Medium long, with the smoke building rather than fading as it goes.

How to Enjoy

• Neat: at 94 proof it needs nothing, and the fruit is the whole point.
• Highball: the way this style is actually drunk in Japan. Soda, one big cube, a lemon twist. It is excellent.
• In a Japanese style Old Fashioned: the umeshu fruit does the work sugar usually has to.
